Anyone who ever thought that low-fat and healthy cuisine equals dull is in for a big surprise! Mon Dieu, quite the contrary, when in the right hands!

German Executive Chef Christof Syre came to the Four Seasons Resort in Las Colinas via a route that began when he was a child, working in his family's 120 year old wine bar and restaurant known as Vinehause Syre. "I literally grew up in the kitchen-cooking is my calling and my passion," he says. From there, Syre's talent did not go unnoticed, and he eventually moved to Asia where he became Chef at the Regent Hong Kong. No wonder then that his cooking style includes a fusion of European and Asian influences and leans toward light fresh seafood dishes with uncomplicated flavors. He enjoys using fresh herbs and regional fruits and vegetables available at the Farmer's Market in his Dallas area. His amazing touch has made the hotel's new "Café On The Green" Restaurant a popular place for hotel guests and local residents alike.

At Lake Austin Spa Resort, Executive Chef Terry Conlan's philosophy is that food should truly be enjoyed, and that people should eat what they like. So, why not create healthy gourmet meals full of flavor, texture and nutrition-and without much fat? "By eating this way you can begin to make it part of an overall healthy lifestyle-not as a short-term diet," he says. A self-proclaimed "foodie", Chef Conlan's eclectic and sophisticated menus are inspired by seasonal and regional ingredients, while cuisines of the world influence many of his dishes, from Tex-Mex to Thai. In fact, many of the herbs, spices, vegetables and greens he uses are hand picked right from the resort's own garden.
